- 2 large cucumbers, thinly sliced
- 2 tablespoons sesame seeds
- ¼ cup chopped peanuts
- 2 tablespoons apple cider vinegar
- 1 tablespoon water
- ½ tablespoons sesame oil
- 1 teaspoon honey
- ¼ teaspoon red pepper flakes
- In a small bowl, whisk the dressing ingredients. Refrigerate until serving.
- Place all the remaining ingredients in a large bowl.
- Just before serving add in the dressing and toss gently to combine.
