Mediterranean Chickpea Salad


  • Brown Rice
  • 2 cups spinach, chopped
  • ½ cup chickpeas, drained and rinsed
  • ½ cup cucumbers, diced
  • ½ cup tomatoes, diced
  • ½ lemon, juiced
  • 2 tablespoons hummus
  • Optional: Lettuce, feta cheese, kalamata olives, etc.


  1. Cook brown rice according to package directions.
  2. Add spinach to a bowl or a lunch container. Top with rice, chickpeas, cucumbers, tomatoes, lemon juice, hummus, and additional toppings.
